We've used this recipe in our family for 30 years and has always been a big hit when served over either cubed boiled potatoes or brown rice. I have altered the original recipe for health reasons by reducing the salt and using no salt added stewed tomatoes so you may want to add a little back in or use regular stewed tomatoes. This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth. This is one of my favorite soups! Slightly sweet with a kick! The chipotle en adobo peppers can be found at a regular grocery store where the authentic mexican ingredients are. This soup is so simple, with the main ingredient being only carrots, and no potatoes or cream to thicken it. I'm sure there are many directions in which the flavors could travel, but I prefer to make it with a predominantly Indian taste. Feel free to adjust the spicy-level as necessary. I like it with a moderate to intense heat, but you can add more or less cayenne and crushed red pepper to suit your own taste. The final product should be smooth and evenly blended, so you will need some kind of food processing device to get it right. I first thought this a strange combination when I saw this on the menu on an Alaskan Cruise. The head waiter told me to try it; that I wouldn't be dissapointed. True enough, it was amazing! Found this from The Spice Smuggler on Food Network. Super flavorful and low in calories! Szechuan Peppercorns are very fragrant and kind of have a numbing effect on the mouth which is fun! Restaurant-style hot and sour soup, minus the sugar, corn starch and MSG. You can add whatever other vegetables you like (hot and sour soup usually has mushrooms but I don't like them).
