Roasted Garlic & Feta Mushrooms with Runny Egg

I know this one sounds a little strange, but give it a try; it's a great source of protein. The sweetness of the roasted garlic pairs really nicely with the feta, and the egg yolk binds all of the flavors into one cohesive package. If you're squeamish about undercooked eggs or can't eat egg yolks, this probably isn't the recipe for you as I've tried it with the egg cooked differently and never found it as good.

This concept is based off of Coach Nicole's Mini Vegetable Frittatas, except that I use mini-muffin pans to make a smaller-size serving, and different ingredients. It's good! These are great to make up in advance and then have for a quick breakfast-on-the-go, too.

An asian flare on a classic...I prefer to use opah or ono for these tacos, but use what suits your taste; just keep in mind, a firm white fish is a must--anything to soft will just crumble.
