I had an abundance of zucchini in the garden this year. This recipe used one large one (about 1-1/4 lbs) and was a big hit! I would even make this for a light Sunday night supper. My son suggested adding ham next time and slicing tomatoes over the top. It takes some time, but can be prepared ahead. Try it!

I found a great recipe for vegetable soup in a weight watchers magazine. I simply altered it a bit to fit my tastes here. Very filling and tasty great for a fall or winter day lunch or dinner! This is a very easy recipe.

I threw this together tonight with what I had in my house. You can reduce the sodium by draining and rinsing the beans (not accounted for here), but if you do that, you'll want to add about 1/4 cup of low-sodium vegetable or chicken stock to give it some moisture while it cooks. Play around and add more vegetables/seasonings, this is just what I had at the time.
