A variation on a theme... Very similar to my "Low-Fat, Low-Calorie, High-Fiber, High-Protein Blueberry Bran Muffins" - just with a couple of ingredient changes. Look for more variations to come! :) [Created 2008-12-31.]

I made these bars on a whim while craving a pumpkin-y granola bar that would keep me full (with lots of fiber and protein). Feel free to play with the spices and cut down on the sugar as you see fit! The soy nuts could easily be exchanged for any nut (something like pecans would probably taste a bit more fall-like).

Also feel free to cut them up into smaller servings! I wanted mine to serve as breakfast or a mini-meal so I made them slightly bigger.

I had trouble getting the crust to stay together when I added the bar mixture. Any suggestions on how to alter the recipe to fix this are more than welcome! Enjoy!

This is one of my favorite breakfast options because it's easy and delicious! It's great for rebuilding muscles after a workout and has high fiber to keep you fuller longer. Enjoy my favorite breakfast food!

This is a left-over soup. Small amount of hamburg, onion, canned tomatoes and whatever left-over vegetables are in the fridge. You can add corn, string beans, etc. You can play with ingredients to even lower the calories more or make it vegetarian if you'd like or add pasta instead of potatoes. This is even good with all canned vegetables in the winter.

This easy to prepare dinner can be assembled the night before to save time at dinner or allow someone to just put in the oven for you.

Alterations can be made.
Examples: Chicken breasts instead of Pork chops. Any flavor of stuffing. Low sodium stuffing can be used. And you can substitute cream of chicken or celery for the cream of mushroom.

This is a fantastic recipe! Everyone who tries it wants the recipe.

NOTE: I do not add salt though the recipe calls for it. I also use half the sugar the recipe asks for. Still delicious! I also add mushrooms to mine though not listed.
