This salad goes really well with my maple cider dressing (which I entered separately). It's a great fall treat. Use white cheddar cheese, if you can find it, for a really nice flavor!

Apple salsa and cheese salad

This is a sweet, creamy, spicy salad that has enough punch to be the centerpiece of a meal but is low calorie enough that it works as a side dish. For dinner, I like to serve it with a plain grilled chicken breast to add protein to the meal.
