These taste like cheese blintzes! The pancakes are so fluffy, tasty and are hubby's new favorite! Especially good with jam and/or fresh berries. Could also top with bananas and peanut butter. Healthy and delicious....YUM!

This is moist and hearty hotcake loaded with pumpkin flavor brought out by traditional holiday spices.

You can freeze leftover pancakes in an an airtight freezer bag and reheat the next morning in the microwave (about 1 minute on high).

My children ask for this recipe instead of standard pancakes all the time. I love that they get a veggie in their breakfast, and that they don't want syrup with it!!!

an experiment from a recipe online She used sweet potatoes mashed instead of the flakes, but I didn't get them cooked. Also used brown sugar instead of xagave and whole eggs. Kind of like them, but will use blueberries next time. Of course, might have to try a small batch with the sweet potato to see...
