Dice chicken in bite sized pieces and cook thoroughly. Spray nonstick cooking spray on one side of 2 tortillas and place that side down on a cookie sheet. Combine diced cooked chicken, salsa and cheese in a bowl. Spread mixture on tortillas. Top with remaining tortillas. Bake 16-18 minutes at 350 degrees. Cut into quarters and enjoy with fat free sour cream or remaining salsa. (Must add extra calories for toppings).

This is a basic oatmeal pancake recipe, but I've tweaked it with the spices, soy and wheat flour and flax meal. Most pancake recipes call for butter in them, but the flax meal is a great, healthy substitute. Skim the pan lightly with butter for cooking, if you wish but you don't need any more butter than that. They're delicious!

This recipe is borrowed from http://crockpot365.blogspot.com/2008/02/foil-packet-tilapia-crockpot-recipe.html. I replaced the mayonnaise with Kraft Mayo with Olive Oil to cut the fat, and included shredded parmesan cheese (not part-skim).
