A delectable "almost no-cook" recipe that is worth waiting for the water to boil.

Moroccan Turkey Meatballs with Spiced Tomato Sauce (by Joanne Lusted; CleanEatingMag.com)
(no ratings)

The rich and spicy flavors of Moroccan cuisine are the perfect way to warm up on those chilly winter nights! High in protein and flavor, these tasty meatballs make a great appetizer or entrée. You can even turn them into shish kabobs with small bamboo skewers. Don’t feel discouraged by the lengthy ingredients list – because Moroccan cooking is based on fragrant spices, many of the ingredients are repeated in both the sauce and the meatballs.

Vegetable

Great appetizer. You can substitute any colorful veggie combo or use any rice. If you use "sticky" rice you could eliminate the mayo.

Mind-Blowing Turkey Gyros
(no ratings)

I started out making my gyros with lamb and they turned out amazing. They also turned out expensive. Turkey is a decent substitute.

Portable high protein, low fat breakfast. I pack one between a light English muffin and have a great tasty breakfast to take to work. In this version, I used what I had on hand. Any type of leftover meat will work (I especially love ham), and you can use whatever cheese you prefer. These can be frozen and reheated.

I have taken my grandmother's recipe and have adapted it for use with splenda. The original recipe called for sugar and since sugar does not have the same mass as splenda i had to increase everything but the oatmeal by 1/2.

Another Heidi Swanson recipe from this big fan. It's really really easy (once the squash cutting is done) and the flavours are surprisingly complex. I used Heidi's original recipe for calorie calculations but you can lighten it up by using light coconut milk or just a bit less (I do this anyway, because I find the coconut flavour too strong otherwise) and skipping the butter. I also generally use butternut squash, but any winter squash works. Enjoy!
