Dice chicken in bite sized pieces and cook thoroughly. Spray nonstick cooking spray on one side of 2 tortillas and place that side down on a cookie sheet. Combine diced cooked chicken, salsa and cheese in a bowl. Spread mixture on tortillas. Top with remaining tortillas. Bake 16-18 minutes at 350 degrees. Cut into quarters and enjoy with fat free sour cream or remaining salsa. (Must add extra calories for toppings). Really good chicken fajita filling. Adapted from a fajita recipe that used tequila where I use teriyaki. I feel better using this 'cause I know what spices go into it, therefore no MSG like some of the packaged fajita spice mixes. (For the record, since a lot of the liquid is drained from the chicken after it marinates, I've used only half portions of the marinade juices to calculate calories. Basically, you're covered.) :) Original recipe used generic measurements, but I weighed my ingredients this time, and used those to calculate calories. This is an excellent recipe that meets several dietary needs. It is gluten free, low fat, low carb and low calorie. I nicknamed it "Church Chicken" because I made it (by request) for all our socials. It has always been a great success. I use my electric roaster so the dish can be plugged in at the social to keep it warm.
