To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

This recipe is much easier that it looks because the beans and vegetable stock are just 1 can each but it would not let me put that. This is a great make ahead to use for lunch all week or to make burritos to freeze. This filling is not bland at all and super healthy.Submitted by KATIEOWEN5
