A great low-fat side dish for Thanksgiving dinner! Attractive presentation, and taste delicious! The original recipe was found at www.lowfatcooking.about.com - I changed the marinade ingredients to reduce the calories a bit

This is the way my mother makes it and we love it! You can use Butternut squash instead of acorn squash. I also use unsalted butter instead of Smart Balance from time to time.

Low Sodium, satisfying autumn or winter dish.
Good Carbs. Low sugar. Uses Splenda & small amount of maple syrup instead of brown sugar.
Serve with a main course oven meal.
