Cover lentils in boiling water. Let rest for 15 minutes. Saute onions and leeks in olive oil for 10 minutes. Add carrots, celery and spices and garlic. Saute 10 minutes more. Add lentils and broth tomato paste. Heat to boiling and simmer for 1 hour. Add sliced kielbasa and wine and warm through. Use fully cooked kielbasa.

This is a modification of Tal Ronnen's celery root soup, made over for low carbers. It's not vegan in this version because I use chicken fat and stock to replace the cashews, but you could make it vegetarian by switching out the chicken for cream &/or butter. The taste is sort of reminiscent of a good stuffing, and that is why I think it would be great as a first course for Thanksgiving, or any winter occasion.

This is a family favorite around here so I am glad it is reasonable in the cal department with out any changes though I should warn you one cup just isn't enough so make sure you have enough room for at least two. You can replace chicken broth with water to reduce cals more but be warned you lose some of the flavour.
