Thes muffins keep you full for hours.
Calls for 1 1/2 cups apple. I upped the carrots from 1 1/2 cups to two. Left out raisens. Could probably use differant vegies or fruits.

These I have only made for the top of a pot pie but they were light on the inside and crusty on the out side. They did not get soggy and absorb all the gravy. I addes some shredded chedder chees and pepper to the top but did not include in the ingriedents.

This is a very corn flavored corn bread. Maybe a little more southwest then the southern corn bread I grew up on. Perfect everytime.

From Eating Well - Modified with half whole wheat flour and half unbleached white flour. You could up the olive oil to 3T and leave out the sesame oil and scallions for a good basic flat bread.
