A low carb recipe. I leave out the tortillas though. Chicken could be added for more protein and be sure to add cheese and avacado to individual servings of soup. If you are not watching your carbs, then you can add tortilla strips to your bowl of soup. Make homemade ones by frying strips of corn tortillas in oil until crispy or use packaged tortilla chips. Next time I make this my 4 year old son asked me to tone it down since I have white pepper and spicy brown mustard in it. It is REALLY good, though! I left out the tomato sauce in another batch and made meatballs. It made about meatballs. If you have 4 meatballs per serving or about 2.26 oz you get 251.3 cal, 19.6 fat, 1.2 carbs, .1 fiber, and 17.1 protein.
