Awesomeness found on the back of can - Hands down BEST spinach dip I've had. I actually add a bit more of the spinach than the recipe calls for since it IS spinach dip!
Perfect served with tortilla chips (not included in stats), in fact... Toss in some black beans and/or chicken serve with tortillas or rice instead of chips and call it dinner!

Every vegetarian loves this stock, which is a perfect substitute for chicken stock. A serving is one quart.

My beautiful vinaigrette
Incredible! 5.0/5

Chop garlic very fine.

Add dijon to the garlic and whisk in the olive oil.
Add the juice of a lemon and whisk again.
Add the balsamic vinegar and whisk until an emulsion has occurred.

Asian vinaigrette: Substitute sesame oil (decrease to 1 T) for the Olive oil and soy sauce for the lemon. Use Rice vinegar instead of balsamic and add grated fresh ginger.

You can change the flavor by experimenting with different oils (I love walnut, unrefined peanut and avocado oil) and different acidic bases (lemon juice, different vinegars, grapefruit juice, etc) and omitting garlic to tone down the flavor as well. Be creative in your approach to the flavor and use the best ingredients you can afford.

Crispy Green Beans with Pesto
Very Good 4.3/5
(12 ratings)

The trick to learning to like vegetables you hate is to disguise their appearance and flavor. Think about what it is you dislike about that particular vegetable.
I asked Fred why he's anti-green beans. It turns out that he remembers the long, mushy canned beans from childhood.
Step 1: Chop the beans into 1-inch pieces.
Step 2: Change texture. Sauté them in a bit of olive oil, salt and pepper on high heat until they're crispy on the outside and still slightly firm.
Step 3: Change the flavor: Add pesto (with homemade lemony basil from the co-op) and an extra bit of parmesan cheese!
Results: "Is this pasta?" Fred asks as I hand him a plate of beans.

Broccoli is my favorite vegetable, but not everyone agrees with me. To convert people, I like to serve this simple recipe. Garlic sauteed in olive oil offers a sweet richness, and the lemon juice offers a nice tang.
If you are using fresh broccoli, peel the stalks and dice them before adding to the cooking water.

Fluffy, golden pancakes studded with juicy strawberries are the perfect addition to a spring breakfast or brunch. We like them with a side of crispy bacon.

Southwestern Eggrolls: SparkRecipes Un-Chained Recipe Contest Winner
Very Good 4.4/5

I love Chili's Southwestern Eggrolls. They have so much tasty stuff in them, but I hate the fact they are deep fried. I added more beans and corn and then put them in the broiler for crunch.
These are great made ahead of time and *frozen for a quick meal or a fun snack for the big game. I make a double batch so I can freeze some for later.
