These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly.

* For those of you that are salt restricted- You might want to leave out the salt as there's probably enough in the Parmesan cheese. I just sprinkled a little salt over the bowl.

I also extended the cooking time. The original time was 20 mins.

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

This is made with Brown Sugar Spenda Blend, because my DH is diabetic. If you choose to make it with plain brown sugar, just adjust the amount up to taste [brown sugar Splenda is way sweeter than regular], probably about 4 packed tsp, which only adds about 10 calories per serving. And I used red and yellow peppers, only because we don't like green here. So, again, you pick.

If you have ever been to the Chicago area and had an Italian Roast beef sandwich you know you just can't get something like that in most areas! This recipe comes the closest I've found to that taste. Only real difference is the shredded roast beef instead of shaved.

Honey Mustard Roasted Chicken

Rich, flavorful honey mustard chicken with carrots and potatoes.

In a small bowl, mix together the brown sugar, hoisin sauce, rice wine vinegar, ketchup, soy sauce and water. Set aside.

In a large skillet, heat the olive oil. Dredge the chicken in the cornstarch and shake off any excess. Cook the chicken in the olive oil until browned. Remove the chicken from the skillet and cover with foil to keep warm.

Using a paper towel, wipe the skillet clean. Add the sesame oil, green onions and ginger. Cook until fragrant, about 1 minute. Add the sauce mixture and bring to a boil. Simmer mixture for 2 minutes, or until the sauce thickens a bit. Add the chicken back into the skillet, toss to coat with sauce, and continue cooking until the chicken is cooked through.

Serve garnished with green onions, hot pepper flakes (if desired) and sesame seeds (if desired).
