Serve with Ancho Chile Salsa

Dark green, shiny poblano chiles are the traditional choice for chiles rellenos. They have great flavor, but may be too spicy for some tastes. Anaheim chiles are reliably mild substitutes. You can stuff chiles with almost anything: cheese, shrimp, smoked fish, tuna and sour cream, grilled vegetables or crabmeat. For a larger crowd, the recipe can be doubled. Serve the chiles rellenos with beans and rice.

Grilled Rellenos are much healthier than the traditional fried ones. This can also be done in an oven. I came up with this recipe after trying so many at restaurants and not being impressed so I decided to make my own. Lay them on a bed of lettuce for a complete meal. This was inspired by Rick Bayless and my dearest cook amigos. Sounds like it might taste healthy, however it is truly decadent - eaten weekly around here! Use whatever extras you have around. Julienned jicama is a delightfully sweet textural addition. Toss a tomatillo or two in the oven with your salsa ingredients for and added tang and shot of vitamins! Have fun.
