To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

Korean mixed rice dish, great for a hearty breakfast. This serves two, but I often find one serving to be a little too much. This dish is can be played with in many ways: Use any veggies you like (I generally choose for taste and texture/crunch). You can substitute scrabbled or poached egg for fried. Chicken or pork in place of beef, or just use more mushroom for a meaty texture. To cut the sodium, use Bragg's Liquid Aminos in place of shoyu.
