An African recipe I learned from a friend from Sera Leon , West Africa. He made it with Pigs feet , I like it better with chicken. Can also be made with fish !

Is normally served over rice as more of a sauce then a soup.

When I make it for the family I omit the cayenne pepper and let people add their own at the table.

Slow Cooker Chicken Tortilla Soup

This is an adaptation of my favorite chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash.

This salad goes really well with my maple cider dressing (which I entered separately). It's a great fall treat. Use white cheddar cheese, if you can find it, for a really nice flavor!

This salad dressing is fantastic on spinach! Try making a salad of spinach leaves, green apples, and white cheddar cheese. Great for fall, and lots of vitamins!
