Cookbook creator says: My husband, the fast food junkie, says these are better than anything he gets at Taco Bell. Yay! I think they'd be just as good with shrimp instead of the steak or chicken. Sprinkle a little shredded cheese on top if you want, but I find the flavor in the onions & peppers is fantastic alone!

Cookbook creator says: This is a great side dish and very simple to make! Very versitile. I love to crisp up corn tortillas on the stove top (in a little bit of heated olive oil) and then pile the salad on top. Or it's great on top of your favorite salad greens with a simple oil & vinegar dressing.
