Cookbook creator says: Instead of baking it in the oven, it was grilled. I used homemade taco seasoning and I sprinkled it with about a tablespoon of shredded habinaro cheese. I will definetely be making this again, only next time it will be for the whole family.

This is my variation on a recipe in Kevin Mills' cookbook "Faster! I'm Starving!" It only takes about 20 minutes total to prepare and it's super yummy. The cauliflower is tender, but still firm -- not mushy like it gets when you boil or steam it. If you want to change the spice mix, just be sure you use other warm spices.

A nice change of pace for seafood. The combination of the sweetness of the margarita flavor with the spice and zest of the salsa gives a unique taste to this dish. I suggest marinating marinating 3 hours in the refrigerator versus 30 minutes unrefrigerated because it gives it a richer, zestier flavor.

This recipe technically makes a single serving, but it's a generous one by my standards (about 15 shrimp) It's so quick and easy, but packs some serious spice!
