Great chilit to make a pot of and eat on all week long.
My family loves it for a healthy and hearty quick meal. Great over baked potatoes too. Sometimes I use canned beans and rinse them, but find it is easy enough and lots cheaper to use dried beans and either soak them overnite or throw them into a pot to boil for 10 minutes and then let sit for a couple of hours. This is great in a crock pot or on top of the stove for the afternoon. You can add yummy garnishes such as diced avacadoes, onions, or shredded cheese. I like with a shot of tabasco in mine.

I learned this recipe from a friend of mine during our FeldenkraisŪ training program.

It has become one of my go-to dishes for home meals, parties and pot-lucks.

This recipe can quite easily be modified to make more or less, as you desire. The toppings can also be varied.

It will serve four as a main dish, or more as a side or appetizer.

The number of servings given here was the side or appetizer number.

This is seriously the world's best spinach and artichoke dip! It's creamy and fairly low fat. I use low fat cream cheese, but you could use fat free. This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it! This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. You might need to thin it a bit with cooking water from the pasta.)
