My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. There are a lot of steps to this flavourful, vegan pasta dish, but you can do a lot of the prep ahead of time. The onion / garlic puree can be easily made up to a week ahead, and the chickpeas will keep their crunch for a day or two if kept in a container like a cookie tin - NOT a plastic bag! Peel, Cut and Cube eggplant and yellow crookneck squash into 1 inch pieces. Rinse under cold water, drain and spread on 11x15 baking sheet sprayed with PAM. Arrange in single layer and top with sliced onion rings. Drizzle or Use olive oil mister to spray all veggies (coat evenly). Bake uncovered in 375 degree over 20-25 minutes. Remove from oven. Spray a 2 qt casserole and transfer veggies to dish. Stir around then salt & pepper to taste. Sprinkle the garlic powder to top. Spoon jar sauce over all veggies and top with shredded mozzarella, then sprinkle the parmesan on top. Cover and Return to oven another 20-30 minutes (until bubbly). This is one of my all time favorite tofu recipes. I've done a fair bit of tweaking to it and think that I may finally have what I am after. Great source of protein. A spicy dish of tofu and ground pork. It's really hot, but can cure that Asian craving with too much guilt. This is my version, which I've developed after trying several recipes. It's one that you can't really mess up. If you don't like a seasoning, ditch it. I recommend trying the black bean sauce or paste, though. It's divine.
