Spinach and Tomato Pasta Salad
Very Good 4.1/5
(146 ratings)

Most pasta salads are heavy on the pasta and light on everything else. This version, which can be served warm or cold, includes a hefty portion of vegetables--both spinach and tomatoes.

UPDATED: Added the ramen and the almonds. Still a low-fat winner. Note that you don't use the ramen seasoning packet, so the sodium count is incorrect. Thanks for all the awesome reviews!

I'm sure no one in China actually eats anything like this, but we thank them for their culinary contribution of the soy-sesame-ginger-chile combo, which makes anything delicious.

This is just a very basic chicken salad for topping off greens or slapping between a couple slices of bread. It's a basic recipe which, in the past, I've done with much more mayo - the milk thins out the mayo and helps spread the flavor out in this variation. Adding dried cranberries or chopped nuts makes it even better, but doing that, one should remove the relish and add a little more milk (maybe up it to 3 tablespoons of milk). This is a -big- recipe because it keeps for many days in a sealed container.

Think you dislike beets? Not after trying this recipe! Roasting brings out the beets' natural sweetness, and the feta offers a salty contrast.

A gal brought this to a potblessing meal at the church. It disappeared quickly! If you add more or less mayo or more chips, adjust the calories accordingly. Adding a tbsp. of cumin and some red pepper would give the salad a little kick.

A good one that tastes "fancy" but isn't. Easy one for first time scallop users - just remember, sear them, set them aside and no more than 5 more minutes!
