A recipe inspired by Chef Megs. It uses more homemade ingredients. It takes a little longer, to make the beans from dry, but you can make a big batch and freeze them for other recipes. The TVP and Guac are super easy/quick.

Cookbook creator says: My go to bread. Adapted fromt he King Arthur recipe only by switching the White Flour to White Wheat flour. I'm at high altitude and this bread never fails me. I like it with an egg wash of egg beaters as well.

Black beans, sweet potatoes and greens are spiced up and baked in egg roll wrappers to create burritos that are heavy on taste and light on calories. (Feel free to change this recipe with what you've got in the fridge. No sweet potatoes? Try zucchini or butternut squash. Swap kale for spinach, Swiss chard or your favorite green! Instead of black beans, try kidney, pinto or garbanzo beans.)
