This recipe is originally published by Bryanna Clark Grogan. I have substituted plain yogurt for tofu sour cream as it calls for in the original vegan recipe. Sweet and savory, it is delicious for dinner or lunch with brown rice or couscous If you are using fresh pumpkin, save the seeds for toasted pumpkin seeds as a snack.

I love Curry! This has it all. Normally you'd find peas and cauliflower in such a dish, but I had broccoli. It was still wonderful. Serve with basmati or wild rice. Yum.

I used to get wonderful tempeh scallopini in Denver. This isn't quite it, but it's the best substitute so far. The restaurant served it on mashed potatoes with a side of cooked greens.
