This is a yummy, spicy version of the classic shepherd's pie. There are many substitutions that can lower the calories and sodium to suit your needs/tastes. Using ground turkey, low-fat cheese and no salt added veggies are the easiest three I can think of. Also, I love Jiffy mix cornbread, but I'm sure there are healthier versions out there! Enjoy! This is an adaptation of my favorite chicken tortilla soup recipe.
