If you like spicy and you like fajitas, you will LOVE this easy stew! I seem to be really good at creating spicy, mexican inspired "slop"...LOL...this one was particularly yummy! I have never done this before and I guessed on some of the ingredient amounts for the nutritional info...sorry...Im a newbie!...LOL

Simple and yummy way to prepare sweet potatoes! Recipe can easily be halved, but I go ahead and make the full recipe because we love having them on hand!

got this from a friend and modified it a bit to make it less calories...

**NOTE** this is low cal because I use 93/7 ground turkey and whole wheat noodles; if you change that the calories will increase, however if you use less cheese the calories would go down... - (there is about 250 calories per roll the way I make it)

*VARIATION* another way to make this would be to substitute the ricotta with fat free cottage cheese and add 1/2 tbsp low fat cream cheese to each roll (just plop it in the middle) - this should not change the calories by much and would be super yummy...
