One of my greatest problems with maintain weight loss is that I have separate cookbooks. I have authentic Italian fare, American favorites and then "diet food" cookbooks. Its like having split personalities.
My goal is to blend my recipes into a new, healthy legacy for me and my family.

This is my family's favorite Italian wedding soup. The mini meatballs are a huge hit with the kids. Although many people use spinach for the leafy green in wedding soup, the recipe that was handed down to me called for endive lettuce, so that is what I use. Endive costs a lot less than spinach, and my family and I have always enjoyed our soup made with it. . If spinach is your favorite, feel free to make a substitution. My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.)
