Cookbook creator says: Sounds pretty good and simple! I think for 1/2 c flour & oil I'd sub 1/2 c rolled oats soaked in soymilk... and add some chopped walnuts for the same amount of fat (or more =)... and to up the protein a touch. Plus vanilla & cinnamon. Maybe sub soda & vinegar instead of baking powder for lightness.
