This is truly a cook once and serve three times... I doubled this recipe and ended up with enough sauce to make lasagna three separate times (this recipe is the doubled version)... I assembled the recipe and divided the remaining sauce into two gallon ziplock bags and froze for a future date.

This is a modification of a beef and mushroom stroganoff recipe I tried from another sparkpeople member (budgetmom).
I mix different mushrooms, like portabella and oyster. Can be served over regular egg noodles or eggless egg noodles to make it vegan. These can be found at stop and shop.

What a great use of Basil in the garden. You can top it on fish, chicken, pasta, turkey sandwiches, vegetables and more. this is very creamy and so delish!
