This is a delicious, light, refreshing dessert. It's low cal and sugar and can be made with the lite pie filling in any flavor. Note that this needs to be made the night before to soften the graham crackers.

Hummus is easy to buy premade, but it's so much more delicious when made fresh. Serve this low-fat version with bell pepper strips, cherry tomatoes, lightly steamed broccoli, cauliflower florets and baby carrots.

I love black beans, and I threw this together in a minute in my food chopper. It's just one can of black beans with a few spices added in, then ground up. I put it on Triscuit crackers and it's wonderful!

This can also be used to make "black bean pizza" when put on whole wheat bagels or bread or rolls, topped with cheddar cheese and baked until cheese melts.
