All of these recipes have been made and eaten by myself and my family. Some are great "base" recipes and some are great all on their own. I tend to use 'reduced fat' whenever I can but I never use fat free. Mostly I adjust seasonings to taste.

Cookbook creator says: I used a mexican ranch packet and upped the meat to about 1.5 pounds. I topped mine with salsa. It was a little bit salty so don't add any. My husband said this one was definitely a KEEPER! ( nI served on Arnold's "thins". Only about 100 calories!

Cookbook creator says: I add a ripe mashed banana. I also like to top them with a mixture of trubinado sugar and cinnamon. This takes the cinnamon and sugar measurement out of the recipe.

This is a really thick and chunky soup. Add more broth to make soupier. That will also drop the calorie count because there will be more servings. Do try the sour cream on top. I believe it "makes" the soup.
