We have a "larger than most" family of 5 children and 2 adults. I like to make recipes that give me enough of a leftover for Sunday's Refrigerator Goodies night and for my husband to take for lunch. This cookbooks is a compilation of recipes I've made up myself or adapted from other people.

This recipe is a rendition of a friend's recipe. She made pancakes for me one morning and they so reminded me of my Grandmother's pancakes when I was growing up. I took her recipe and healthied it up a bit.

These are so yummy and comforting. We've begun to eat them for dinner at times. You make them the night before (if you want them for breakfast) or you can make them at breakfast if you want to eat them for dinner.

I rarely use the microwave for anything more than melting butter, but this recipe is too good and I haven't tried to convert it to oven baking. It's fast, which is perfect on a busy morning with a big family.
