Dining Delicious

This is a collection of recipes I've found that are relatively simple, nutritious, and actually taste good. My main motivation is to keep recipes healthy, low fat/low cal/full flavor - but some of them are simply good as is and I've not been able to find good substitutions and still keep the taste.

The combination of haddock and mango salsa creates a juicy and fresh alternative to the “standard” fish bake. Precut frozen mangoes can be used for added convenience. The flavor of the salsa can be intensified by allowing the ingredients to meld together for up to one hour, but it still tastes fresh and sweet immediately if you don’t have extra time. Although this recipe calls for broiling the haddock, the fish can also be baked or sautéed on the stovetop. If you’re looking to sweeten up the fish, add more mango-lime salsa and allow it to marinade before serving.

Cookbook creator says: Made this tonight. Even with the only half of a small onion it still had a pretty strong onion flavor. although I happen to like onions, I think a milder onion like a Vidalia onion would probably be better. The onion won't be so overpowering.

Cookbook creator says: This was easy to make. I may try it with a bit more liquid during the cooking so I can have some reserved to make a gravy with and then serve it over rice.
