This is a GREAT summer recipe to bring to a cookout! It looks so pretty in a trifle bowl ($10 Bed Bath & Beyond.com), takes no time at ALL to make and no one will guess its a healthy treat!
I put 12 servings in the nutritional info but that is a good size serving - even half that would definitely suffice!
Also - using the vanilla sugar free pudding cuts the cals a decent amount and doesnt sacrifice taste at all.

Start by putting the evaporated milk and sugar into a medium sauce pan on low heat siring constantly until sugar is smooth (about 5 min).

Boil the potatoes (with skins on) and the eggs until done. While the potatoes and eggs are cooking you can dice up the celery and onion into a fairly large bowl. Let the potatoes and eggs cool, then dice them up as well into the same bowl with the celery and onions. You can leave the skins on the potato if you like. Once everything is chopped you can mix it up with a 1/2 cup of miracle whip and a 1/2 cup of light mayo. Mix everything together and salt and pepper to taste. Lastly, add the vinegar and stir thoroughly and refrigerate until cool. I like mine very tangy so I put more vinegar depending on taste.

This was thrown together on a cooking night when a friend came over to try a couple of new recipes. We love the idea of low carb cheesecake and decided to mix it up a bit. She said it was "blueberry yumcake" Obviously you could substitute your favorite fresh fruit and you might not want as much cinnamon or to put the cinnamon in the crust instead of in the cheesecake.

Secret ingredient to creaminess without cream? Pureed white beans. And some potato. Ooooh, yum. Recently my grandmother made some delicious oatmeal cookies! Raisins and Pecans made them so yummy!

This is a healthy, high protein, low calorie moist muffin. This was adapted from DUCATI77's Protein Whole Wheat Blueberry Muffins. This turned out to be moist but a bit lower in sugar for my taste. Also, hubby thought it needed more banana flavor. Next time, I would up the brown sugar to 1/2 cup packed and add 1 more mashed banana and possibly 1 tbsp olive oil to make more moist. Overall a decent healthy snack or breakfast on the run.

Crisps are a quick and easy dessert. I like to use whatever fruit is in season: blueberries, strawberries, peaches, cherries, plums, pears, and apples.

I use two cups of fruit in this recipe so that each person gets a full serving of fruit, but when you buy berries they come in pints. One pint of berries yields about 1 1/2 cups. That means you're either a half-cup short or you need to buy two and have a cup leftover. Save the extra berries for your morning cereal, freeze them for smoothies--or just add them to the crisp. The more fruit, the merrier.

You can use frozen (no need to thaw before baking) or fresh fruit in this recipe.

Serve any leftovers atop plain yogurt for breakfast.
