These bean cakes are yummy and great for you. Served with the salsa, it makes a very colorful and festive presentation. I serve these with a lite side salad. Plenty of protein and fiber. Even my meat loving hubby loves this meal.

This is a delicious salad that is so simple to make but tastes like one of those overpriced salads in a fancy restaurant. Ive been working on this for a while trying to get just the right dressing to go with it. It's slightly hig in fat BUT its mainly good fats (nuts, olive oil, etc.) Enjoy!!!!
