(Can't believe I neglected to say this!) Recipe is Isa's from VCTOTW. Entered for my own calorie tracking purposes back in the day. Apologies to Ms. Isa! I didn't create this fine recipe, I just like it.

Sweet, moist pumpkin cupcakes laced with dark chocolate chips with hints of cinnamon and vanilla. I use Nunaturals stevia baking blend and make 'em fat free with fruit puree rather than oil. The original, unaltered version can be found on theppk.com, I believe. Or in her cupcake book. :)Submitted by LEONALIONESS

A flavor powerhouse of protien!! Cooked with no meat or meat by products. Easy to prepare by putting it all in a crock pot.

Serve with whole wheat tortillas and a home made Pico De Gallo and it is a surefire hit for the whole family.

Also the left overs are really good to mash up the next day with some lime juice and serve with tortilla chips! Submitted by MRICHTER2004

Don't be afraid to try these because they're vegan! These are delicious and lighter than traditional banana bread or muffins. I serve them often to omni guests and family members, with many requests for seconds. As always, I don't bother to tell people they're veg*n!

Feel free to substitute dairy milk or any milk alternative (rice, almond, etc) for the soy milk. You may also increase the sugar to 3/4 cup, especially if your bananas aren't overly ripe.
