My take on Alfredo sauce - without the saturated fat. This recipe is pretty easy to manipulate - you can add more parmasean cheese (or romano cheese), black pepper and garlic to taste. You can't even taste the tofu, but by adding it, it gives it a source of protein therefore making it vegetarian! This is a bit of a mish mash/trial and error. I took the group recipes http://www.grouprecipes.com/sr/27824/tofu-vegan-french-toast/recipe/ and added in some protein. I didn't have banana so I subbed applesauce. It's a bit mushy but still yummy! If you use less bread and just pour a ton of batter over one slice it's like a big pancake french toast.
