if you like spicy peanut buttery asian food, you'll like this sandwich.

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. it doesn't really taste any different.

My take on Alfredo sauce - without the saturated fat. This recipe is pretty easy to manipulate - you can add more parmasean cheese (or romano cheese), black pepper and garlic to taste. You can't even taste the tofu, but by adding it, it gives it a source of protein therefore making it vegetarian!

(This is my first recipe I have ever added - it is pretty straightforward, and can easily be changed to your liking... please be kind LOL)

This is a bit of a mish mash/trial and error. I took the group recipes http://www.grouprecipes.com/sr/27824/tofu-vegan-french-toast/recipe/ and added in some protein. I didn't have banana so I subbed applesauce. It's a bit mushy but still yummy! If you use less bread and just pour a ton of batter over one slice it's like a big pancake french toast.
