Slightly modified version- minus 1/3 butter and 1/4 c sugar. Would NOT recommend substituting part-skim ricotta for whole milk, as the extra liquid will result in cake not baking correctly and overflowing loaf pan, resulting in a not very pretty loaf. This is from Alton Brown's cookbook "I'm Just Here For More Food" and modified by substituting applesauce for butter and cutting the sugar from 3 Tablespoons to 1 tablespoon. Truthfully, I think that the sugar could be cut more or left out especially if using sweetened applesauce.
