This is my go-to breakfast. It can be made entirely in the microwave, from ingredients that don't need to be pre-cooked (a must for me since I'm a student with no access to an oven!) You can substitute pre-packaged egg whites instead of separating them out from the egg if you like, and you can also switch out all of the other ingredients to things more to your taste (for example, I sometimes chop up a mini Babybel light cheese or a light Swiss Laughing Cow cheese in place of the shredded cheese).

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the yogurt (I've used applesauce when out of plain yogurt as well). Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving.

A simple and easy coffee cake, its quick to whip up on a weekend morning. Its not fancy, but sometimes that's not what you need!

I often make this for company, mixing the dry ingredients, and the wet in seperate bowls the night before, and mixing the two together in the morning. A nice breakfast without spending all my time slaving away.

I found this recipe on the internet when I was looking for a healtier alternative to store bought bagels.

This is a good substitute for those who love bagels but hate all the calories and the sodium in the store bought ones. The bagels aren't as sweet as the ones in the store, but I'm sure you could add a bit more sugar to the dough if you wanted to make them sweeter.

The recipe is fairly easy to make. The first time I made it I just cut the recipe in half (mainly because I didn't think my family would eat all 30 bagels before they turned).

You can also adjust the recipe to include toppings or add-ins to customize your bagel (not included in the nutritional information calculation). Some suggestions would be sesame seeds (dip into sesame seeds once the egg yolk wash is on the bagel), cinnamon & raisins, blueberry, or anything and everything you'd like to put in.

This recipe has no oil and is easy to add to for fun! It had 3 tablespoons of melted butter in it but I omit that, although it is tasty with. I like to add a 1/4 cup of water to it to thin it a bit more for our taste. I also add cinnamon and vanilla.
