Single-Serving California-Style Chicken Cordon Bleu
Very Good 4.3/5

This recipe takes a traditional French dish and gives it a California twist. A good portion of the fat comes from the avocado, which has mostly heart-healthy monounsaturated fats.

Really yummy, healthy and rather cheap to make. My husband and daughter love this recipe. It is a spin off of the traditional chicken and rice. I listed portions for serving of 8(food for 2 days), but you can cut down if needed.

Light Mustard Honey Chicken - Baked
Very Good 4.3/5
(17 ratings)

This dish is easy to prepare - mix all ingredients (and salt and/or pepper to taste) and marinate with chicken for 10 minutes up to 24 hours before (refrigerate if marinating more than 20 minutes). For Honey, note that 1 tbsp = 3 tsp (i.e. 2/3 tbsp = 2 tsp). Feel free to substitute seasonings to taste.

Recommend preparing this for a family or, for multiple meals to be used in salads, with pasta, veggies and more.

A classic dish that's made easier by using the slow cooker--you're off to work and the slow cooker does the work for you.

Very Easy and Quick Recipe. Recipe recalculated after comment made. I had just one chicken breast instead of 4 in the ingredient calculation. This is correct now.

This recipe was given to me by NoMoreFoolin and my kids loved it. I just typed it up, so I could see the nutritional contents.

My girls dipped them in ranch dressing!

Sprinkle thyme on chicken breasts liberally, saute for 6 minutes each side in olive oil, remove chicken, add honey and vinegar to pan, stir until thickened, return chicken to pan, coat with glaze and serve.

This recipe uses canned vegetables and is useful for somebody who doesn't have a lot of refrigerator space to keep fresh vegetables. However, for a fresher taste you can always use the fresh veggies! It's pretty filling, and fairly low-calorie for 1 cup portions. Make some corn bread to go along with it and add some green beans on the side and you have a great, low calorie dinner.

A family favorite. The only thing I changed was to coat the chicken with water instead of milk. Using skim milk would not change the caloric level by much.
