Great to make on a Sunday. Eat leftovers for lunch or as an anytime protein packed snack. Tastes great with a little side salad with oil and vinegar. Use any and all vegetables or leftover meats. Add garlic or additional spices for more flavor.

I had a ton of zucchini and wasn't sure what to do with it. I tried the recipe and loved it. The first time I only used one egg and a quarter cup of cheese. It was enough for me but to serve to guests, I add more egg and cheese.
