These are excellent and gorgeous when served with caramelized apples, whipped topping and a sprinkling of coarse sugar. Try experimenting with syrup selections as well. Maple or buttery pancake syrup mix very well with the flavors. Other fruit compotes such as blueberry or cinnamon raising go very well, too. Enjoy!

(This recipe was created when experimenting with nutrition plans which cut out cornstarch and white wheat flour. Arrowroot was used just to avoid the cornstarch in baking powder and certainly is not necessary for the recipe to be successful)

This soft, nutritional breakfast bar is great if you are trying to lose weight or lower cholesterol and the kids will love them too.

This recipe makes 30 bars so there are plenty to go around.

This is my version of stuff I normally keep on hand- other then the bacon. I also serve fruit with this to make a breakfast that will keep us full. Watch servings though- Ryan eats 2 servings and I should only eat 1.

Waffles from a french toast recipe - an idea my 8 year old dreamed up and works like a charm! This recipe makes 6 waffles. Nutrition calculated on one waffle each. Combined with yogurt or fruit this makes a delicious breakfast!

Cookbook creator says: Pretty good in small portions although I wasn't a fan of it as much. It was ok and I could eat it but not alot of it. I guess quinoa isn't a favorite.
