Great for Weight Loss Surgery patients with a small serving size of one cup. Includes finely ground beef, protein rich beans, and spicy Rotel tomatoes and chiles. Most people will eat more than a cup! Serving size is just a guesstimate. Appears to be 16 cups.

WLS friendly.
Pork has been a very friendly protein for me since WLS. However it has a tendency to get a bit dry. Therefore, I have been trying ways to add a sauce, or moisture to top off my chop or tenderloin. This is yummy, crunchy, reminds me of the holidays. The cinnamon and nutmeg go great with the sweet onion and crunchy tart apples.

This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth.
