Tofu is used as a substitute for ground meat in this recipe. If you's prefer a more "meat-like" appearance and texture, freeze the tofu at least a day before making this recipe. Thaw the tofu, drain excess liquid and crumble it by hand.

This is a modified version of a recipe in my favorite vegan cookbook (La Dolce Vegan!) I'm not a big fan of the taste of kale by itself, but since it is so nutritious I did some experimenting, and found that it is delicious when minced in a tofu loaf =)

Feel free to add or substitute ingredients with what you prefer or have on hand. This is so simple and delicious, you must try it!

roast veggies and grill polenta until all are golden brown. coat the bottom of a casserole dish with sauce and then layer the veggies and the polenta with the sauce and cheese. Bake for about 20 minutes at 350 degrees until the cheese is melted. Serve with a green salad.

Lots of protein, packed with calcium, vitamins and minerals. Use any veggies you like. Sodium probably a little lower than the calc. because you don't actually eat all of it - some is drained away in the marindade.

This is a great way to play with mushrooms and enjoy some traditional French ingredients (Duxelle is a French mushroom paste that they use in EVERYTHING savory!). Enjoy it with Hungry Girl's Chicken Cordon Bleu or a simple roasted chicken!
