This is a cake-type cobbler. You can use any fruit, fresh or frozen. My favorites are peaches, berries, and-- on the rare occasions when I can find them-- sour cherries. This is adapted from a Martha Stewart recipe, but I've made so many changes, about all that's left is part of the technique.

A delicious breakfast treat; splenda keeps the calories down. Serving size is 1 muffin. Main ingredients are pumpkin and whole wheat flour. Nuts and raisins could substitute for the chocolate chips. At 184 calories per muffin, these are a delicious treat. My son is especially fond of these, with a glass of milk, for breakfast.

I make this tasty banana bread every Christmas. It's excellent to serve to a crowd, or wrap up the mini loaves and give them away as gifts. Brown sugar gives this delicious bread added flavor.

This is a GREAT summer recipe to bring to a cookout! It looks so pretty in a trifle bowl ($10 Bed Bath & Beyond.com), takes no time at ALL to make and no one will guess its a healthy treat!
I put 12 servings in the nutritional info but that is a good size serving - even half that would definitely suffice!
Also - using the vanilla sugar free pudding cuts the cals a decent amount and doesnt sacrifice taste at all.
