Traditionally prepared risotto is delicious and not to terrible for you. It requires some work, but it is well worth the effort.

Delicious gluten and dairy free pancakes. Use as flatbread. GEMS flour was created by Wendy Turnbull in her book gems of gluten free baking. You may substitute 1/4 cup brown rice flour and 1/4 cup amaranth flour for the GEMS flour mix.

Just basic chicken soup, but comes with directions to make chicken broth. I mostly make the soup when I am recovering from a cold--it is pretty plain, but sometimes that is exactly what is called for.
