This is my favorite pizza crust recipe. You can make it in matter of minutes. You can double to make a larger or thicker crust. I have also made mini crusts & froze them to use in the toaster oven. I update the amount of water, should have been 1/2 not 1/3. Slowly add water till you have a dough. May need less or more. This is an adaptation of my favorite chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash. This came from RecipeZaar; the only change I made was in using fresh spinach instead of frozen and I used tomato and basil feta instead of plain. It made it sooooo tasty! Next I'm going to try this stuffing in chicken cutlets. Great served with Lemon Garlic Spinach and a brown rice pilaf with raisins.
