Pizza lover like me.... Man I can still enjoy the great taste without all the CRAZY cal's. Plus you get more bang for you cal going this route.

Each serving is a 6 ounce slice of eggplant, plenty of food.

I found this recipe in a Five Items or Less cookbook and decided to try it. I'll be making it tomorrow. I figure you can use turkey bacon if you want and add whatever spices, such as garlic, oregeno, etc. I will be using a whole grain pasta. Or you can add spinach, broccoli, etc.
